Roasted almond Kulfi is a delicious summer treat. Made with simple ingredients, this eggless indian ice cream is flavoured with cardamom, nuts and other ingredients.
Kulfi is a very popular dessert in India. It’s our version of ice cream, basically milk is cooked till it gets really thick & reduced to almost 1/3rd of it’s original volume. It’s then flavored with nuts, cardamom and saffron or any favourite flavour of yours and then frozen. The texture is not like ice cream but oh my god it’s so delicious!
These day, a number of flavours of kulfi are available like paan, chocolate ,mango , butterscotch but if you want to taste the most authentic one ,then you need to try this roasted almond kulfi.

STEPS TO MAKE KULFI:
INGREDIENTS:
½ cup Almond powder
500 ml milk
1½ spoon vanilla custard (You can also use cornstarch)
1 tsp cardamom powder
½ cup sugar
Method:
Take the almond powder and roast it until golden brown.
Now take half cup milk from 500 ml and add custard powder / cornstarch to it and keep it aside.
In a pan, take sugar and caramelize it on a low flame.
Add milk into it and let it absorb the sugar.
Bring it to boil and after that add the prepared half cup milk custard mixture to it.
Now add the roasted almond and cardamom powder.
Let the milk simmer for 5-10 mins on a medium flame till it reduces to half of it's original volume and take it off the gas.
Once this milk cools down, pour into kulfi moulds and let it set in freezer for 6-8 hours.
To demould these, place the kulfi moulds under warm running water for 15-20 seconds and then tap the mold on the plate.
The kulfi would come out easily.Garnish with some almonds and enjoy these delicious roasted almond kulfis!
