Veg Shami Kebab

Shami kebabs are a popular snack throughout Indian subcontinent. It is eaten as a snack or an appetizer. They may be served with naan along with salsa, hot sauce, chilli garlic sauce, salad or mint chutney. Homemade shami kebab is an easy, quick dinner.If you are cooking these for lunch, you may prepare in advance, wrap up like a takeaway kebab and then reheat in a sandwich maker before eating.

Shami kebabs are made from Bengal gram or Kala Chana. It is high in fibre, zinc, calcium, protein and folate. Also, bengal gram is low in fat and helps to lower cholesterol. It has a good content of calcium, which can help improve your bone health. The amount of calcium in the legume is beneficial to building as well as improving your bone health.

Also, the abundance of fibre content in Bengal gram is an effective natural aid for weight loss. The fibre maintains the sensation of feeling full, thus controlling your appetite.


Steps to cook shami kebab:

INGREDIENTS:

  1. 2 cups boiled bengal gram or Kaala chana

  2. 1 red onion

  3. 1 Green Chilli

  4. 4-5 Garlic cloves

  5. 3-4 tbsp freshly chopped Coriander

  6. 2 tbsp dry roast Besan ( Gram flour)

  7. 2 tbsp Cumin powder

  8. 1 tbsp Red Chilli powder

  9. 1 tbsp Amchoor powder ( Dry mango powder)

  10. Salt to taste

  11. 2 tbsp oil

  12. 1 tbsp sesame seeds

INSTRUCTIONS:

  1. Drain the boiled kaala chana and pat dry with paper towels.

  2. Roughly chop the onion and add to grinder with garlic, green chilli, roasted besan, cumin powder, fresh coriander, amchoor powder, salt, oil and red chilli powder.

  3. Grind to form a thick paste.

  4. Shape into small patties and sprinkle 5-6 sesame seeds on top of each patty (about two tablespoons of mixture per kebab)

  5. Place it in fridge to chill for 10 minutes.

  6. Heat the olive oil in a large frying pan over a medium-high heat. Fry these patties for a couple of minutes on each side, until golden and crisp on the outside.

  7. You may need to do this in batches. Remove from the pan once both the sides are golden brown and crisp.

  8. Enjoy these kebabs with your favourite dip.
